  2. Preheat oven to 355°F (180°C) and prepare an 11x7-inch greased baking pan with parchment paper.
  3. Melt 7/8 cup vegan butter or coconut oil in a medium pot over medium heat.
  4. In a large bowl, mix 2 cups flour, 1.5 tsp baking powder, 0.5 tsp salt, 1 tsp ground cinnamon, and 0.25 tsp ground nutmeg.
  5. Combine dry ingredients with melted butter, 0.5 cup apple sauce, and 1.5 tsp vanilla extract.
  6. Fold in the prepared apples until evenly mixed.
  7. Transfer batter to the prepared baking pan, spreading evenly.
