Step-by-Step Instructions for St. Patrick’s Green Mac & Cheese
  1. Cook the macaroni according to the package directions in salted boiling water until al dente, about 8–10 minutes. Drain and set aside.
  2. In a medium saucepan, melt 3 tablespoons of butter over medium heat. Add 3 tablespoons of flour and cook for about 1 minute until golden. Gradually pour in 2 cups of milk, whisking until thickened, about 5–7 minutes.
  3. In a blender, combine cooked baby spinach and fresh herbs with the warm cheese sauce, blending until smooth. Add extra milk for thinner consistency if desired.
  4. In a large bowl, combine drained macaroni and cheese sauce, stirring to coat evenly.
  5. Preheat your oven to 350°F (175°C). Pour the mixture into a greased baking dish and top with a mixture of panko breadcrumbs and 2 tablespoons of melted butter.
  6. Bake for about 20 minutes until the topping is golden brown and crispy.
  7. Remove from oven and let cool for about 5 minutes before serving warm.
