  • 2 cups Spinach fresh or frozen, squeezed dry
  • 1 cup Cheese mozzarella, feta, or blend
  • 2 cloves Garlic minced
  • 1 large Egg for binding and glaze
  • to taste Salt
  • to taste Pepper
  • optional Spices nutmeg or chili flakes
For the Brush
  • 1 large Reserved Egg Wash

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine cooked and drained spinach with cheese, minced garlic, and egg. Stir in salt, pepper, and optional spices.
  3. Roll out puff pastry sheets and cut into 3x3 inch squares.
  4. Place a spoonful of the spinach and cheese mixture in the center of each square and fold corners or leave open-faced.
  5. Brush assembled squares with reserved egg wash and bake for 18-22 minutes until golden.
  6. Allow to cool for a few minutes before serving warm.
