  • 1.5 lbs raw shrimp Cleaned and deveined
  • 1 lemon lemon juice For cooking
  • 3 sprigs dill weed Fresh dill
  • 2 leaves bay leaves Optional
  • 1 tbsp kosher coarse salt For boiling
  • 1 tsp whole peppercorns For boiling
  • 2 quarts water For boiling
For the Salad
  • 2 ribs celery Diced
  • 3 tbsp scallions Diced
  • 1/3 cup mayonnaise Or Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp apple cider vinegar Or white vinegar
  • 1 tbsp fresh minced parsley Dried parsley can be used
  • 1 tbsp fresh minced dill weed Dried dill can be substituted
  • 1/2 tsp paprika
  • 1/8-1/4 tsp black pepper Adjust to taste
  • 1/2 tsp kosher coarse salt
For the Buns
  • 4-5 buns brioche hot dog buns Gluten-free buns can be substituted
  • 2 tbsp salted butter Melted

Method
 

Step‑by‑Step Instructions for Creamy Shrimp Rolls
  1. Bring 2 quarts of water to a boil in a large pot. Squeeze lemon juice into water and add bay leaves, dill sprigs, kosher salt, and whole peppercorns. Add shrimp and cook for 2-3 minutes until pink and opaque. Drain and cool.
  2. Chop cooled shrimp into bite-sized pieces and place in a bowl. Add celery, scallions, mayonnaise, lemon juice, apple cider vinegar, parsley, dill, paprika, salt, and pepper. Mix until combined.
  3. Preheat broiler. Brush buns inside and out with melted butter. Broil buns on a baking sheet for 1-2 minutes until golden brown. Let cool slightly.
  4. Fill each bun generously with the shrimp salad, packing well. Serve immediately with lemon wedges.
