Preparation Steps
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, crush the graham crackers. Combine with granulated sugar and melted butter. Press into a lined baking dish.
- Bake crust for 10 minutes. Let cool slightly.
- Beat cream cheese, sugar, eggs, and vanilla until smooth. Pour over cooled crust.
- In a saucepan, heat brown sugar, corn syrup, heavy cream, butter, and salt. Cook until slightly thickened.
- Stir in chopped pecans and pour over cheesecake layer. Spread evenly.
- Bake for 35 minutes or until edges are set. Center should jiggle slightly.
- Let cool to room temperature for about 30 minutes, then refrigerate for at least 4 hours before slicing.
- Slice with a warm knife to serve.
