For the Chicken
  • 4 thighs boneless skinless chicken Juicy and flavorful
  • 1/4 cup soy sauce Low-sodium version recommended
  • 2 tablespoons brown sugar
  • 1 tablespoon honey Can be omitted
  • 2 tablespoons gochujang Korean chili paste
  • 1 tablespoon rice vinegar Apple cider vinegar is fine
  • 1 tablespoon sesame oil
  • 3 cloves garlic Minced
  • 1 tablespoon fresh ginger Grated
For the Slaw
  • 2 cups shredded green and red cabbage For crunch and color
  • 1 carrot julienned
  • 1/2 cup mayonnaise Greek yogurt can be used
For Assembly
  • 2 tablespoons butter For toasting buns
  • 4 buns brioche or potato sandwich Soft and flavorful

Method
 

Marinating and Cooking
  1. Marinate the chicken in a mixture of soy sauce, brown sugar, honey, gochujang, rice vinegar, sesame oil, garlic, and ginger for at least 20 minutes.
  2. Prepare the slaw by combining cabbage and carrots in one bowl and whisking mayonnaise, vinegar, salt, and pepper in another. Drizzle the dressing over the cabbage mixture and chill for 15 minutes.
  3. Cook the marinated chicken in a skillet for 6-7 minutes on each side until browned and fully cooked. Let it rest before slicing.
  4. Toast the sandwich buns in the same skillet with butter until golden brown.
  5. Assemble the sandwich by layering the sliced chicken and generous amounts of slaw on the toasted bun.
