Method
 

Step-by-Step Instructions
  1. Preheat a frying pan over medium heat and coat with olive oil spray. Add prosciutto slices, cooking for 3-4 minutes on each side until crispy.
  2. Remove prosciutto and sauté thinly sliced onion in the same pan with a pinch of kosher salt for about 5 minutes until caramelized.
  3. In a mixing bowl, combine ground beef, dehydrated onion, balsamic vinegar, salt, and garlic powder. Mix until just combined and form into 4 patties.
  4. In the same frying pan, cook patties on medium heat for 3-4 minutes on one side. Flip, top with mozzarella, cover to melt for another 3-4 minutes.
  5. In a separate bowl, mix mayo, lemon juice, minced garlic, chopped basil, and salt to taste to prepare the aioli.
  6. Toss arugula with red wine vinegar and salt. Spread aioli on ciabatta rolls, layer with a cooked patty, crispy prosciutto, onions, and arugula.
