- Preheat a frying pan over medium heat and coat with olive oil spray. Add prosciutto slices, cooking for 3-4 minutes on each side until crispy.
- Remove prosciutto and sauté thinly sliced onion in the same pan with a pinch of kosher salt for about 5 minutes until caramelized.
- In a mixing bowl, combine ground beef, dehydrated onion, balsamic vinegar, salt, and garlic powder. Mix until just combined and form into 4 patties.
- In the same frying pan, cook patties on medium heat for 3-4 minutes on one side. Flip, top with mozzarella, cover to melt for another 3-4 minutes.
- In a separate bowl, mix mayo, lemon juice, minced garlic, chopped basil, and salt to taste to prepare the aioli.
- Toss arugula with red wine vinegar and salt. Spread aioli on ciabatta rolls, layer with a cooked patty, crispy prosciutto, onions, and arugula.
