Preparation Steps
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- In a medium saucepan over low heat, melt 4 tablespoons of butter. Gradually whisk in ¼ cup of flour and stir for about 2 minutes.
- Slowly add 2 cups of milk while whisking, cook for 5-7 minutes until smooth, and season with nutmeg and Dijon mustard.
- Cut brioche into cubes and layer half in the baking dish, followed by turkey ham and half of the Gruyère cheese. Repeat with remaining ingredients.
- Pour the béchamel sauce generously over the layers and cover completely.
- Cover tightly with plastic wrap and refrigerate overnight for best flavor or bake immediately for 30 minutes.
- In the last 10 minutes of baking, crack 4 eggs on top of the casserole and bake until set to your liking.
- Allow the casserole to cool slightly before serving and enjoy!

Notes
Using slightly stale bread is preferred to avoid a soggy casserole. For richer sauce, beat in 4 eggs and ½ cup of heavy cream into the béchamel.
