Preparation Steps
- In a mixing bowl, combine yogurt, peanut butter, and sweetener. Blend until smooth and creamy, about 2-3 minutes.
- Optional: Fold in half a cup of chocolate chips gently with a spatula.
- Spoon blobs of the mixture onto a parchment-lined baking tray, spaced apart.
- Insert a popsicle stick into each scoop, pressing halfway down.
- Optional: Sprinkle chopped peanuts on top, pressing them gently into the mixture.
- Freeze the bars until firm for about 2-3 hours.
- Melt chocolate chips in a microwave-safe bowl or double boiler until smooth. Stir in coconut oil if using.
- Dip each frozen bar into the melted chocolate, allowing excess to drip off.
- Return the coated bars to the freezer for an additional 30 minutes to set.
- Once set, remove the bars from the freezer and enjoy or store in an airtight container.
