- In a medium saucepan, combine strawberries, sugar, and water. Cook over medium heat for about 10 minutes until thickened. Let cool completely.
- Crush graham crackers into fine crumbs and mix with melted butter. Press firmly into an 8x8-inch baking dish. Bake at 350°F for 8–10 minutes until golden and cool.
- Spoon softened vanilla ice cream over the crust and spread evenly.
- Drizzle cooled strawberry compote over the ice cream and swirl gently.
- Cover with plastic wrap and freeze for at least 4 hours until firm.
- Remove from freezer and cut into bars using a warm knife.
