Step-by-Step Instructions for Homemade Corn Nuts
  1. Soak the Hominy: Place 15 oz of dried hominy in a bowl, cover with water, and soak for 6-10 hours, preferably overnight.
  2. Dry the Hominy: Spread soaked hominy on a towel, pat dry, and air dry for about an hour.
  3. Prepare the Oil and Seasoning: Preheat the oven to 375°F (convection) or 400°F (conventional). Mix sea salt, garlic powder, paprika, and onion powder.
  4. Coat the Hominy: In a bowl, combine dried hominy with peanut oil, toss to coat, then sprinkle in seasoning mix.
  5. Bake: Spread seasoned hominy on a baking sheet and bake for 20 minutes, stir, then bake for another 20-25 minutes until golden brown.
