- Heat 1 tablespoon of oil in a large pot over medium-high heat. Char the halved onions and ginger for 4 minutes.
- Add enough water to cover the aromatics, the chicken thighs, star anise, cinnamon, cloves, fennel, coriander, fish sauce, and sugar. Bring to a gentle simmer.
- Reduce heat to low and simmer gently for 90 minutes, skimming off any scum.
- Remove chicken, strain the broth to remove solids, and adjust salt to taste.
- Shred the chicken into bite-sized pieces, discarding bones and skin.
- Cook the rice noodles as per package instructions and place them in bowls.
- Top noodles with shredded chicken and ladle hot broth over the top. Serve with fresh toppings.
