Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and coat a baking sheet with nonstick cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. In a large bowl, mix the melted butter and sugar. Then whisk in the egg, vanilla extract, and applesauce.
  4. Gradually add the dry mixture to the wet ingredients, stirring gently. Fold in the diced apples.
  5. Scoop portions of the batter onto the prepared baking sheet, leaving space between each.
  6. Bake for about 10 minutes until golden brown, then switch on the broiler to crisp the tops.
  7. Prepare the glaze by whisking together the powdered sugar and apple cider until smooth.
  8. Brush half of the glaze over the warm fritters and broil for an additional 2-4 minutes.
  9. Remove, brush with the remaining glaze, and allow to cool on a wire rack for about 15 minutes.
  10. Serve warm or at room temperature.
