  3. Stir in mixed vegetables, diced potatoes, and seasonings, and bring to a gentle simmer.
  4. Let the soup cook for at least 1 hour to meld flavors; stir occasionally.
  5. Taste and adjust seasoning, adding more salt or sugar as needed; simmer for another 30 minutes.
  6. Remove and discard bay leaves before serving.
