  • 1/2 teaspoon Black pepper
  • 1 tablespoon Cajun seasoning plus more for serving
  • 1 tablespoon Fresh thyme chopped
  • 2 Bay leaves
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons Hot sauce plus more for serving
  • 1/2 teaspoon Filé powder optional
For Garnish
  • 4 Green onions thinly sliced, plus more for serving
  • Cooked long-grain white rice for serving

Step-by-Step Instructions
  1. In a large, heavy-bottomed pot, heat 3/4 cup of vegetable oil over medium heat. Gradually whisk in 3/4 cup of all-purpose flour, stirring continuously for 10-15 minutes until the mixture reaches a milk chocolate color.
  2. Once your roux is ready, add 6 finely chopped garlic cloves, 3 chopped celery stalks, 1 chopped green bell pepper, and 1 chopped yellow onion to the pot. Stir for about 5 minutes.
  3. Incorporate the chicken and sausage into the pot. Stir in the kosher salt, black pepper, Cajun seasoning, and Worcestershire sauce.
  4. Pour in enough water or chicken stock to cover the ingredients, about 6-8 cups. Bring to a gentle simmer and let it simmer uncovered for 1-2 hours.
  5. Taste and adjust the seasoning. Stir in 4 thinly sliced green onions before serving.
  6. Ladle the gumbo over bowls of cooked long-grain white rice and enjoy!
