  • 1 pound lean ground beef 90% lean or less for a less greasy dish
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning optional red pepper flakes for heat
  • 1 cup tomato sauce or salsa adds a tangy element
  • 1 cup water to adjust consistency
For the Cilantro Lime Rice
  • 1 cup long-grain white or brown rice follow package cooking instructions
  • 2 tablespoons lime juice freshly squeezed
  • 1 cup fresh cilantro chopped
  • 2 tablespoons butter or olive oil for creaminess
For the Toppings
  • 1 can black beans rinsed
  • 1 cup corn fresh or canned
  • 1 cup shredded lettuce for crunch
  • 1 medium avocado diced or sliced
  • 1 cup cherry tomatoes halved
  • 1 small red onion thinly sliced
  • 1 cup shredded cheese cheddar, Monterey Jack, or cheese blend
  • 1 cup sour cream for topping

Method
 

Step-by-Step Instructions
  1. Rinse the rice under cold water until clear. In a saucepan, boil 2 cups of salted water, add rice, cover, and simmer for 15-20 minutes. Fluff rice and stir in lime juice, cilantro, and butter or oil.
  2. Heat olive oil in a skillet. Sauté onion for 3-4 minutes until translucent. Add garlic and sauté for another 30 seconds.
  3. Add ground beef to skillet, breaking it up as it cooks over medium-high heat for 6-8 minutes until browned. Drain excess fat.
  4. Mix in taco seasoning, tomato sauce or salsa, and a splash of water. Simmer for 5-7 minutes until thickened.
  5. Assemble by layering cilantro lime rice, spooning the beef mixture over it, and adding toppings as desired.
  6. Top with sour cream and hot sauce. Garnish with fresh cilantro and jalapeño if using. Serve with lime wedges.
