- Rinse the rice under cold water until clear. In a saucepan, boil 2 cups of salted water, add rice, cover, and simmer for 15-20 minutes. Fluff rice and stir in lime juice, cilantro, and butter or oil.
- Heat olive oil in a skillet. Sauté onion for 3-4 minutes until translucent. Add garlic and sauté for another 30 seconds.
- Add ground beef to skillet, breaking it up as it cooks over medium-high heat for 6-8 minutes until browned. Drain excess fat.
- Mix in taco seasoning, tomato sauce or salsa, and a splash of water. Simmer for 5-7 minutes until thickened.
- Assemble by layering cilantro lime rice, spooning the beef mixture over it, and adding toppings as desired.
- Top with sour cream and hot sauce. Garnish with fresh cilantro and jalapeño if using. Serve with lime wedges.
