- In a medium bowl, whisk together olive oil, minced garlic, lime juice, honey, smoked paprika, and salt and pepper to taste.
- Add shrimp to the marinade and refrigerate for at least 20 minutes.
- Thread shrimp and pineapple onto skewers, alternating them.
- Preheat grill to medium-high heat, around 400°F (200°C), and lightly oil the grates.
- Grill skewers for about 2-3 minutes on each side until shrimp is opaque.
- Remove from heat, let rest for a minute, then serve with garnishes.
