Ingredients
  

For the Skewers
  • 1 pound peeled and deveined shrimp
  • 2 cups fresh pineapple chunks Canned is an option, but fresh is best!
For the Marinade
  • 1/4 cup olive oil
  • 3 cloves minced garlic Adjust according to taste
  • 2 tablespoons lime juice Freshly squeezed
  • 2 tablespoons honey
  • 1 teaspoon smoked paprika
  • salt & pepper To taste

Method
 

Preparation
  1. In a medium bowl, whisk together olive oil, minced garlic, lime juice, honey, smoked paprika, and salt and pepper to taste.
  2. Add shrimp to the marinade and refrigerate for at least 20 minutes.
  3. Thread shrimp and pineapple onto skewers, alternating them.
  4. Preheat grill to medium-high heat, around 400°F (200°C), and lightly oil the grates.
  5. Grill skewers for about 2-3 minutes on each side until shrimp is opaque.
  6. Remove from heat, let rest for a minute, then serve with garnishes.
