  • 1 cup chives or green onions
  • 1/2 cup mayonnaise or Greek yogurt
  • 1 tablespoon tarragon adjust to taste if using dried
  • 1/4 cup yogurt or sour cream
  • 1 each lemon for zest and juice
  • 1/4 cup olive oil or any light oil
  • to taste salt and pepper adjust according to preference
Sandwich Ingredients
  • 2 cups lettuce or any leafy greens
  • 1 cup cucumbers diced
  • 1 each avocado ripe, smashed
  • 1 cup mozzarella or feta
  • 1/2 cup sprouts optional
  • 4 slices bread whole grain or gluten-free

Method
 

Preparation Instructions
  1. In a blender, combine chives, mayonnaise, tarragon, yogurt, lemon zest, juice of half a lemon, olive oil, salt, and pepper. Blend until smooth.
  2. In a bowl, squeeze juice from remaining lemon over lettuce and cucumbers. Drizzle with olive oil, season with salt and pepper, and toss gently.
  3. Cut the avocado in half, remove the pit, scoop flesh into a bowl, and mash with a fork, seasoning with salt and pepper.
  4. Spread the smashed avocado on one slice of bread. Layer lettuce and cucumber salad, mozzarella, and sprouts on top.
  5. Spread green goddess dressing on remaining bread slices and place on sandwich, dressing side down. Press gently.
  6. Cut the sandwich in half and serve immediately with vegetable sticks or light soup.
