Step-by-Step Instructions for Glazed Banana Streusel Muffins
  1. Preheat your oven to 425°F (220°C) and line a standard cupcake tin with muffin liners.
  2. In a medium bowl, whisk together ½ cup of all-purpose flour, ½ cup of light brown sugar, ½ teaspoon of cinnamon, and a pinch of salt. Pour in ¼ cup of melted unsalted butter, mixing until it resembles crumbly wet sand.
  3. In a large mixing bowl, melt ½ cup plus 3 tablespoons of unsalted butter and allow it to cool slightly. Whisk in ¾ cup of brown sugar, one large egg, one egg yolk, and 3 mashed overripe bananas.
  4. In a separate bowl, sift together 1½ cups of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon of salt, ½ teaspoon of cinnamon, and a dash of nutmeg. Fold this dry mixture into your wet banana mixture until just combined.
  5. Spoon the batter into the prepared muffin liner cups, filling each about ¾ full. Generously sprinkle the streusel topping over each muffin.
  6. Place the muffin tin in the preheated oven and bake at 425°F (220°C) for 5 minutes, then reduce the oven temperature to 350°F (175°C) and bake for an additional 16 minutes.
  7. Remove the muffins from the oven and allow them to cool in the pan for around 10 minutes. Transfer them to a wire rack to cool completely.
  8. Whisk together 1½ cups of confectioners sugar and 5 tablespoons of heavy cream until smooth, creating a sweet glaze to drizzle over your cooled muffins.
  9. Serve and enjoy your Glazed Banana Streusel Muffins with a cup of coffee or tea!
