  • 1 loaf Brioche or challah or other sweet bread
  • 6 large Eggs essential for custard
  • 3/4 cup Dark Brown Sugar light brown sugar or coconut sugar can be used
  • 1/2 teaspoon Kosher Salt can substitute with standard salt
  • 1 teaspoon Vanilla Extract almond extract can be used instead (use half)
  • 1 cup Half & Half or whole milk or coconut milk
  • 4 tablespoons Butter can substitute with margarine or vegan butter
  • 1/4 cup Granulated Sugar can adjust sweetness with brown sugar
  • 2 teaspoons Gingerbread Spice Mix can substitute with pumpkin pie spice
For the Topping
  • 1/4 cup Granulated Sugar adjust sweetness based on preference
  • 1 tablespoon Gingerbread Spice Mix experiment with other spices

Method
 

Preparation Instructions
  1. Cut the brioche into 2-inch cubes and place them in a greased 9x13 baking dish.
  2. In a large mixing bowl, whisk together the eggs, dark brown sugar, kosher salt, vanilla extract, and half & half until smooth. Pour over the brioche cubes, ensuring every piece is coated.
  3. Refrigerate for 30 minutes to allow brioche to absorb flavors.
  4. Preheat the oven to 350°F (180°C).
  5. Melt the butter in a saucepan and whisk in granulated sugar and gingerbread spice mix.
  6. Drizzle the topping mixture over the soaked brioche.
  7. Cover with foil and bake for 30 minutes, then uncover and bake for another 15-20 minutes until golden brown.
  8. Let the dish rest for about 5 minutes before serving.
