For the Sauce
  • 2 Tbsp Butter or olive oil for lighter version
  • 3 cloves Garlic, minced or garlic powder to taste
  • 2 Tbsp All-Purpose Flour or cornstarch for gluten-free
  • 3/4 cup Milk preferably whole or 2%
  • 1/4 cup Low-Sodium Chicken Broth or vegetable broth
For the Shrimp
  • 1 lb Shrimp, peeled and deveined fresh or frozen
For the Flavor
  • 2 Tbsp Parsley, freshly chopped or basil
  • Kosher Salt to taste
  • Black Pepper to taste
For the Topping
  • 1 cup Mozzarella, shredded or provolone/Monterey Jack
  • 1/4 cup Parmesan, freshly grated plus 2 Tbsp for topping
For the Extras
  • 1 cup Chopped Tomatoes or canned diced tomatoes

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and set aside a baking dish.
  2. Cook the penne in a large pot of salted boiling water until al dente (8-10 mins). Drain and set aside.
  3. In a large skillet, melt butter over medium heat, then sauté minced garlic for 1-2 min until fragrant. Add shrimp and cook until pink (3-4 mins).
  4. Sprinkle flour over shrimp, stir to coat, then gradually add milk and broth, whisking until sauce thickens (2-3 mins).
  5. Lower heat and mix in chopped tomatoes, parsley, half of the mozzarella, salt, and pepper. Fold in the cooked penne.
  6. Transfer to a baking dish, top with remaining mozzarella and Parmesan, and bake for 15-20 mins until bubbly and golden.
