Prepare the Oreo Crust
- Preheat your oven to 350°F (175°C). In a food processor, pulse Oreo cookies into fine crumbs. Mix with melted butter and press into a springform pan. Bake for 10 minutes and let cool.
Make the Cheesecake Filling
- In a large bowl, beat cream cheese until smooth. Gradually add sugar, then eggs one at a time, mixing well after each. Stir in vanilla and sour cream until combined.
Setup Water Bath for Baking
- Place the filled springform pan into a roasting pan and pour hot water halfway up the sides. Bake for 50-55 minutes until edges are set and center is jiggly.
Cool Gradually
- Turn off the oven, leave the door ajar, and cool for 1 hour. After cooling, refrigerate for at least 4 hours or overnight.
Prepare Cosmic Drip
- Heat heavy cream until hot but not boiling, then pour over chocolate chips. Let sit for 2-3 minutes, then whisk until smooth.
Assemble and Drip
- Release the cheesecake from the pan, place it on a serving plate, and drizzle the cosmic ganache over the top.
