Step-by-Step Instructions for Greek Yogurt Pancakes
  1. In a small bowl, whisk together 1 cup of all-purpose flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, and a pinch of salt until fully combined.
  2. In a separate medium bowl, whisk 1 cup of Greek yogurt, ½ cup of milk, 2 large eggs, 1 teaspoon of vanilla extract, and 2 tablespoons of melted butter until smooth and creamy.
  3. Gradually add your dry ingredients into the wet mixture, gently folding with a spatula until just combined.
  4. While the batter rests, preheat a nonstick skillet or griddle over medium heat.
  5. Pour ¼ cup of batter onto the preheated skillet for each pancake. Cook for about 2-3 minutes until edges dry and bubbles form.
