Method

Step-by-Step Instructions for Fiesta Lime Chicken
  1. Combine olive oil, lime juice, lime zest, chili powder, brown sugar, cumin, smoked paprika, onion powder, garlic powder, and chipotle chili powder (if using) in a bowl to create a wet rub. Coat the chicken breasts with the rub and marinate for 15-30 minutes.
  2. Heat a skillet over medium-high heat, adding a drizzle of olive oil. For grilling, preheat the grill to medium heat.
  3. Place the marinated chicken in the skillet and cook for 3-5 minutes until golden-brown. Flip and cover the skillet, cooking for an additional 5-7 minutes or until internal temperature reaches 165°F.
  4. Prepare the Avocado Corn Salsa by combining avocados, cherry tomatoes, sweet corn, red onion, red bell pepper, jalapeño, and cilantro in a bowl. Toss and refrigerate.
  5. Remove chicken from the skillet and let it rest for about 5 minutes. Slice the chicken into strips for serving.
  6. Serve the sliced Fiesta Lime Chicken topped with the Avocado Corn Salsa. Consider serving alongside cilantro lime rice.
