- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Lay each flour tortilla flat on the countertop. Stack roast beef in the center, followed by mozzarella or provolone cheese.
- Roll the tortilla around the filling, tucking in the sides. Place seam-side down on the baking sheet.
- Brush the tops with melted butter and sprinkle garlic powder, onion powder, and dried parsley.
- Bake for 12–15 minutes or until golden and crispy. Monitor closely to ensure cheese is melted.
- Prepare the au jus by simmering beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, salt, and pepper for 5-7 minutes.
- Cut the roll ups into halves or thirds and serve warm with au jus.
