  • 8 ounces Thinly Sliced Roast Beef deli-style or leftover roast
  • 1 cup Shredded Mozzarella or Provolone mozzarella for stretch, provolone for flavor
  • 4 large Flour Tortillas soft and sturdy wrap
  • 2 tablespoons Melted Butter for golden crunch
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 tablespoon Dried Parsley for freshness
For the Au Jus
  • 2 cups Beef Broth
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Instructions
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Lay each flour tortilla flat on the countertop. Stack roast beef in the center, followed by mozzarella or provolone cheese.
  3. Roll the tortilla around the filling, tucking in the sides. Place seam-side down on the baking sheet.
  4. Brush the tops with melted butter and sprinkle garlic powder, onion powder, and dried parsley.
  5. Bake for 12–15 minutes or until golden and crispy. Monitor closely to ensure cheese is melted.
  6. Prepare the au jus by simmering beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, salt, and pepper for 5-7 minutes.
  7. Cut the roll ups into halves or thirds and serve warm with au jus.
