Step-by-Step Instructions

  2. In a large mixing bowl, combine the peeled and diced potatoes with shredded cheddar cheese, crumbled bacon, minced garlic, and chopped onion. Add in mayonnaise (or Greek yogurt if desired) and mix until well combined.
  3. Transfer the potato mixture into the prepared baking pan and spread it out evenly.
  4. Place the pan in the preheated oven and bake for 1½ hours, until the potatoes are tender and the edges are crispy.
