Step-by-Step Instructions
  1. Select large, ripe strawberries, cut off green stems, and slice in half lengthwise. Hollow out the center for filling.
  2. In a medium bowl, whip heavy cream until stiff peaks form, about 5 minutes. Avoid overbeating.
  3. Mix softened cream cheese, sour cream, sugar, vanilla extract, and lemon juice (if desired) in a separate bowl until smooth.
  4. Gently fold whipped cream into the cream cheese mixture until fully combined.
  5. Fill a piping bag with cheesecake filling and pipe into each hollowed strawberry half.
  6. Sprinkle graham cracker crumbs on top and serve immediately or chill briefly before serving.
