Step-by-Step Instructions for Grinch Mini Cheesecakes
  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. Crush 10-11 Oreo cookies to fine crumbs and mix with melted butter until combined.
  3. Spoon the crust mixture into the lined cupcake pan and press down firmly.
  4. Beat the softened cream cheese and sugar together until smooth.
  5. Add the room temperature eggs and vanilla extract, mixing well.
  6. Add neon green food coloring and mix until you achieve the desired hue.
  7. Spoon about 1/4 cup of the cheesecake mixture into each liner.
  8. Bake for 15-17 minutes until centers are slightly jiggly.
  9. Cool in the pan for 30 minutes then refrigerate for at least 2 hours.
