  • 1.5 cups Milk or dairy-free milk

Filling
  • 8 oz Cream Cheese or Greek yogurt for a lighter substitute
  • 0.25 cup Icing Sugar or granulated sugar if pre-ground
  • 1 whole Orange for zest and juice
  • 1 cup Double Cream or whipped coconut cream for dairy-free option
Topping
  • to taste Cranberry Sauce homemade or store-bought

Method
 

Preparation
  1. Create a well in the flour, add eggs, and whisk in the milk until smooth. Let the batter rest for 20-30 minutes.
  2. Heat a pan and grease it. Pour batter, swirl to coat, cook until golden, then flip.
  3. Beat cream cheese and icing sugar until smooth. Add orange zest and juice, then fold in double cream.
  4. Take a warm crepe, add cranberry sauce on one quarter and orange cream on another, fold or roll.
  5. Dust with icing sugar and extra orange zest before serving. Enjoy!
