For the Cake
  • 2 cups all-purpose flour Or use cake flour for a lighter texture
  • 1 cup sugar Granulated sugar is preferred
  • 1 tbsp baking powder Ensure freshness for optimal results
  • 1 tsp baking soda Ensure freshness for optimal results
  • 1/2 tsp salt
  • 1/2 cup butter Unsalted, room temperature
  • 4 large egg whites Room temperature
  • 2 tsp vanilla extract Opt for pure vanilla
  • 1 cup sour cream Can substitute with yogurt
  • 1/2 cup milk Any type of milk
  • 1 tbsp lemon zest Optional but recommended
For the Frosting
  • 4 cups powdered sugar Sifted for lumps
  • 1 cup butter Unsalted, room temperature
  • 2 tsp vanilla extract Opt for pure extract
  • 2 tbsp milk To adjust frosting consistency
  • 1 tbsp blue food coloring For decorative effect
For the Decoration
  • 1 cup coconut Lightly toasted
  • 2 tbsp cocoa For visual appeal
  • 1 cup chocolate eggs Cadbury Mini Eggs are great

Method
 

Baking Instructions
  1. Preheat the oven to 325°F (163°C). Gather your baking equipment.
  2. Spread the coconut on a baking sheet and toast for 5-10 minutes.
  3. Grease and flour the cake pans, tapping out excess flour.
  4. Whisk together the dry ingredients in a large bowl.
  5. Mix the wet ingredients in a separate bowl until smooth.
  6. Combine the wet and dry mixtures gently until just combined.
  7. Divide the batter among the cake pans and bake for 25-30 minutes.
  8. Allow the cake layers to cool for about 10 minutes in the pans.
  9. Beat the frosting ingredients until light and fluffy.
  10. Mix some frosting with cocoa for a spatter effect.
  11. Tint the remaining frosting with blue food coloring.
  12. Assemble the cake layers with blue frosting in between.
  13. Chill in the refrigerator for about 30 minutes before adding eggs.
