Step-by-Step Instructions for Christmas Enchiladas
  1. Preheat your oven to 180°C (360°F).
  2. In a mixing bowl, combine crumbled cheese, diced bell pepper, and green chilis. Season with salt and pepper.
  3. Heat corn tortillas over a gas flame or in a dry skillet for about 20-30 seconds per side.
  4. Spread a thin layer of red enchilada sauce onto each tortilla, then fill and roll them tightly.
  5. Drizzle oil over the enchiladas and bake for 10-15 minutes until heated through.
  6. After baking, drizzle the remaining red sauce over half the enchiladas and green sauce over the other half; bake for an additional 5 minutes.
  7. Remove from oven, sprinkle with reserved cheese, and let sit before serving.
