  1. Begin by washing and trimming your fresh produce. Thinly shred both green and red cabbage using a sharp knife or mandolin, aiming for about 4 cups total.
  2. In a medium-sized bowl or jar, whisk together rice vinegar and soy sauce or tamari. Add honey or maple syrup, toasted sesame oil, neutral oil, grated ginger, minced garlic, and lime juice. Mix until combined.
  3. In a large mixing bowl, combine your prepared cabbage, carrots, broccoli, and green onions. Drizzle about three-quarters of the sesame dressing over this colorful mixture. Gently toss until evenly coated.
  4. Just before serving, sprinkle crispy chow mein noodles or wonton strips and sesame seeds over the top for crunch.
