Step-by-Step Instructions for Creamy Tuscan Shrimp and Scallops
  1. Begin by warming 2 tablespoons of olive oil in a large skillet over medium-low heat for 1-2 minutes.
  2. Pat the scallops dry and sear for 2-3 minutes on each side until golden brown. Remove and keep warm.
  3. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Pour in 1 cup of heavy cream, gently bringing it to a simmer. Stir continuously.
  5. Stir in 1/2 cup of chopped sun-dried tomatoes and 1 tablespoon of Italian seasoning. Simmer for 2-3 minutes.
  6. Add 1 pound of shrimp and 2 cups of spinach. Cook for 3-4 minutes until shrimp is pink and spinach wilts.
  7. Return the scallops to the skillet and sprinkle in 1/2 cup of Parmesan cheese. Heat through for a minute.
