Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Peel and slice your choice of root vegetables into 1/8 inch rounds and place them in a large bowl.
  3. In a medium saucepan over medium heat, melt butter, add minced garlic, sauté for about 1 minute, then pour in heavy cream, season, and let simmer for 3-4 minutes.
  4. Layer half of the sliced root vegetables in the greased baking dish, sprinkle cheese over them, pour half of the cream sauce, and repeat with the remaining ingredients.
  5. Cover the dish tightly with aluminum foil and bake for 45 minutes.
  6. Remove the foil and bake uncovered for an additional 15 minutes until the top is golden brown and crispy.
  7. Allow to cool slightly before serving and enjoy!
