- Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Peel and slice your choice of root vegetables into 1/8 inch rounds and place them in a large bowl.
- In a medium saucepan over medium heat, melt butter, add minced garlic, sauté for about 1 minute, then pour in heavy cream, season, and let simmer for 3-4 minutes.
- Layer half of the sliced root vegetables in the greased baking dish, sprinkle cheese over them, pour half of the cream sauce, and repeat with the remaining ingredients.
- Cover the dish tightly with aluminum foil and bake for 45 minutes.
- Remove the foil and bake uncovered for an additional 15 minutes until the top is golden brown and crispy.
