  • 1 cup Textured Vegetable Protein (TVP) Substitute with lentils or crumbled tempeh if desired.
  • 1 cup Vegan Beef Stock Can be replaced with vegetable stock for a lighter taste.
  • 2 tablespoons Olive Oil Any neutral oil can be used.
  • 1 medium Onion Any variety (white, yellow, or brown) works.
  • 2 cloves Garlic Fresh garlic preferred, but garlic powder works in a pinch.
  • 1 teaspoon Oregano
  • 1 teaspoon Thyme
  • 1 teaspoon Cumin Adjust according to taste preference.
  • 1 teaspoon Smoked Paprika Adjust according to taste preference.
  • 1/4 teaspoon Cayenne Pepper Adjust to taste or exclude.
  • 1 teaspoon Liquid Smoke Can be omitted.
  • 2 tablespoons Soy Sauce Use tamari for a gluten-free option.
  • 2 tablespoons Tomato Paste
  • 1 can Crushed Tomatoes
  • 1 can Chopped Tomatoes
  • 1 tablespoon Light Brown Sugar Coconut sugar can be used as a substitute.

For the Cheese Sauce
  • 2 tablespoons All-Purpose Flour Can be replaced with gluten-free flour.
  • 2 cups Soy Milk Any non-dairy milk can be used.
  • 1 tablespoon Dijon Mustard Yellow mustard can replace if needed.
  • 1/4 cup Nutritional Yeast Can be omitted.
For the Pasta
  • 12 ounces Ziti Noodles Any tubular pasta works.
For Garnish
  • to taste Fresh Chopped Parsley Optional garnish.

Method
 

Preparation Steps
  1. Hydrate the TVP in a bowl with boiling vegan beef stock for about 10 minutes until soft. Sauté onion and garlic in olive oil, then mix in herbs and spices for another minute.
  2. Combine the hydrated TVP with sauce ingredients and let simmer for 10 minutes.
  3. In a saucepan, heat olive oil, whisk in flour, then slowly stir in soy milk until it thickens. Add mustard and nutritional yeast, season to taste.
  4. Cook ziti noodles in boiling salted water until al dente, then drain and rinse.
  5. Preheat oven to 400°F. Mix pasta with the 'beef' sauce and cheese sauce and place in a baking dish, covering with remaining cheese sauce.
  6. Bake uncovered for 25 minutes until topped is browned and bubbly, garnish with parsley.
