Ingredients

  • 2 tablespoons Sriracha adjust based on spice tolerance
  • 1 tablespoon Lime Juice or lemon juice as an alternative
For the Shrimp
  • 1 pound Shrimp can substitute with chicken or tofu
  • 1 tablespoon Olive Oil or canola/avocado oil
  • 2 tablespoons Soy Sauce or tamari for gluten-free option
For the Rice and Vegetables
  • 2 cups Rice choose white, brown, or quinoa
  • 1 cup Carrots shredded
  • 1 cup Cucumbers sliced
  • 1 cup Radishes sliced
  • 1 medium Avocado sliced
  • 2 tablespoons Green Onions chopped
For the Garnish
  • 1 tablespoon Sesame Seeds optional
  • 1 cup Cilantro optional

Method
 

Make the Spicy Mayo
  1. Whisk together mayonnaise, sriracha, lime juice, and soy sauce in a small bowl until smooth and creamy. Set aside.
Cook the Shrimp
  1. Heat a skillet over medium heat and add olive oil. Once shimmering, add shrimp in a single layer and cook 3-4 minutes on each side until pink and opaque.
Season the Shrimp
  1. While cooking shrimp, season with soy sauce, garlic powder, smoked paprika, black pepper, and honey or maple syrup.
Cook the Rice
  1. Prepare rice according to package instructions while shrimp cooks. Fluff rice with a fork once done.
Assemble the Bowls
  1. Divide cooked rice among bowls and layer cooked shrimp on top.
Add the Vegetables
  1. Arrange carrots, cucumber, radishes, avocado, and green onions around shrimp in each bowl.
Drizzle with Spicy Mayo
  1. Generously drizzle spicy mayo over the bowls.
Serve and Garnish
  1. Add pickled ginger and seaweed strips if desired. Serve immediately.
