  • 2 cups Stale Bread, cubed use challah or brioche for richness
  • 2 cups Whole Milk can substitute with oat milk
For the Sauce
  • 0.5 cup Unsalted Butter
  • 1 cup Light Brown Sugar, packed
  • 0.5 cup Heavy Whipping Cream
  • 1 tsp Vanilla Extract for sauce

Method
 

Step-by-Step Instructions
  1. Grease an 8x8-inch casserole dish with butter or cooking spray.
  2. Cut stale bread into 1-inch chunks and spread evenly in the prepared dish.
  3. In a large bowl, whisk together whole milk, eggs, pumpkin puree, sugar, melted butter, vanilla extract, ground cinnamon, nutmeg, ginger, and cloves until well combined.
  4. Pour the pumpkin mixture evenly over the bread chunks and stir gently to coat.
  5. Allow the mixture to rest for 20-25 minutes at room temperature.
  6. Preheat your oven to 350°F (176°C) and cover the dish with foil before baking it for 50-55 minutes.
  7. While it bakes, melt unsalted butter in a saucepan, then stir in brown sugar, cream, and vanilla to make the sauce.
  8. Let the pudding cool for a few minutes before serving with warm brown sugar sauce.
