Ingredients
  

For the Scallops
  • 1 pound U10/U12 Dry-Packed Scallops Choose dry-packed for optimal texture.
  • 2 teaspoon Kosher Salt Adjust according to taste.
  • 1 teaspoon Black Pepper
  • 4 wedges Lemon Wedges Serve on the side.
For the Compound Butter
  • 1/2 cup Salted Butter Softened at room temperature.
  • 2 clove Garlic Minced.
  • 1/4 cup Fresh Parsley Chopped.
  • 1/4 teaspoon Crushed Red Pepper Flakes Optional.
  • 1/4 teaspoon Paprika
  • 1/2 teaspoon Garlic Powder
  • 1/2 cup Parmesan Cheese Freshly grated.
For the Crunchy Topping
  • 1/2 cup Panko Breadcrumbs

Method
 

Preparation
  1. Rinse the scallops under cold water and remove the foot. Pat dry and season with salt and pepper.
  2. Combine softened butter, garlic, parsley, salt, black pepper, red pepper flakes, paprika in a bowl. Mix well and fold in Parmesan.
  3. Preheat oven to 350°F (175°C) and arrange scallop shells or a baking dish.
  4. Place scallops in shells or baking dish and top with compound butter.
  5. Bake for 8-10 minutes until opaque and firm.
  6. Combine melted butter with panko breadcrumbs and sprinkle on top of cooked scallops.
  7. Broil for 1-2 minutes until topping is golden brown.
