- Preheat your oven to 350°F (175°C) and prepare your baking sheets with silicone mats or parchment paper.
- Mix together all-purpose flour, cornstarch, baking soda, and salt in a bowl until evenly blended.
- Cream the softened unsalted butter, light brown sugar, and granulated sugar in a large bowl until fluffy and pale.
- Add large eggs, vanilla extract, and almond extract to the mixture, mixing until just combined.
- Add a few drops of pink gel food coloring to the wet mixture and stir gently until evenly distributed.
- Gradually mix in the dry ingredient blend until a thick cookie dough forms.
- Fold in the finely chopped maraschino cherries and semi-sweet chocolate chips until evenly distributed.
- Scoop golf ball-sized portions of dough onto the baking sheet, pressing extra chocolate chips and cherry pieces on top.
- Bake for 10-13 minutes, until set around the edges but still soft in the center.
- Cool on the baking sheet for about 15 minutes before transferring to a wire rack.
