- Preheat your oven to 430°F (220°C) and prepare a greased baking tray, placing it in the refrigerator.
- Cut out a 2-inch circle from cardboard to use as a cookie shaping template.
- In a mixing bowl, beat butter and confectioner’s sugar together for about 3 minutes until light and fluffy.
- Add honey to the mixture and mix for an additional minute until combined.
- Combine sifted flour, salt, and cinnamon in a bowl, then gradually mix into the wet ingredients. Refrigerate batter for 15 minutes.
- Take your baking tray and cardboard circle template out. Spread a teaspoon of batter inside the circle on the tray.
- Bake in the preheated oven for about 3 minutes, until edges are golden brown.
- Remove from oven, cool slightly, and use a spatula to loosen cookies. Shape if desired, then let cool completely on a wire rack.
