  2. Add the boneless chicken breast pieces and season lightly with salt and pepper. Cook for 5-7 minutes, stirring frequently, until the chicken is golden brown and cooked through.
  3. In the same skillet, add another tablespoon of oil if needed, and toss in mixed vegetables. Stir for about 3-4 minutes. Add minced garlic and grated ginger, sautéing for an additional minute until fragrant.
  4. Return the cooked chicken to the skillet and mix it with the sautéed vegetables. Add leftover rice, breaking up clumps with your spatula. Stir thoroughly.
