Step-by-Step Instructions for Cottage Cheese Egg Bites
  1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with olive oil or cooking spray.
  2. In a large mixing bowl, crack in the large eggs and whisk them vigorously until blended and frothy, about 1-2 minutes.
  3. Gently fold in the cottage cheese into the egg mixture until smooth and well incorporated.
  4. Sprinkle in the shredded cheddar cheese and mix it evenly throughout the batter.
  5. Add the chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder to the mixture and stir well.
