Preparation
- Preheat your oven to 200°C (400°F) and line a baking sheet with aluminum foil.
- In a mixing bowl, combine chipotle peppers, honey, lime juice, cumin, smoked paprika, salt, and black pepper and whisk together.
- Coat the chicken thighs in the marinade and let rest at room temperature for 15 minutes.
- Arrange the chicken thighs skin-side up on the baking sheet and bake for 30 to 35 minutes.
- Meanwhile, place potatoes in a pot with cold salted water, add garlic, bring to a boil, then simmer for 15 minutes.
- Drain potatoes, return to pot, add butter and milk, and mash until smooth, then stir in smoked Gouda.
- Serve mashed potatoes on a platter, top with chicken thighs, and garnish with cilantro.
