Preparation
  1. Start by gathering your ingredients. Finely chop 1 small onion, 2 cloves of garlic, and ¼ cup of fresh parsley. Set them aside in separate bowls for easy mixing.
  2. In a large mixing bowl, combine 1 pound of ground chicken with chopped onion, garlic, parsley, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, and season with salt and black pepper. Mix thoroughly.
  3. Moisten your hands with water and shape the mixture into elongated ovals, about 2 to 3 inches long.
  4. Preheat your grill or non-stick pan over medium-high heat for about 5 minutes. Lightly brush with olive oil.
  5. Place kofta on the grill, cooking for approximately 5-7 minutes on each side until golden brown and cooked through.
  6. In a small bowl, mix 1 cup of plain yogurt with the juice of half a lemon and a pinch of salt. Add minced garlic for extra flavor.
