Ingredients

For the Casserole
  • 2 tbsp Unsalted Butter Adds richness and flavor; substitute with olive oil for a lighter option.
  • 2 lbs Chicken Thighs (boneless, skinless) Provides juiciness; chicken breasts can also be used but are less tender.
  • 1 tbsp Olive Oil For cooking chicken; can use any oil preferred.
  • 4 cloves Garlic (minced) Enhances flavor; fresh garlic is preferable over jarred.
  • 0.25 cup Chicken Stock Adds depth of flavor; can use vegetable stock as a vegetarian option.
  • 1 can Cream of Chicken Soup Base of the creamy sauce; substitute with gluten-free cream soup for a gluten-free version.
  • 1 can Heavy Cream Adds creaminess; use milk for a lighter version, though the texture may vary.
  • 1.5 cups Cheddar Cheese (shredded) Provides a rich, cheesy flavor; medium to sharp cheddar is recommended for intensity.
  • 0.5 cup Sour Cream Adds tanginess and creaminess; Greek yogurt is a great substitute.
  • 0.33 cup Boursin Cheese Gives rich flavor; can be replaced with cream cheese or any flavored cheese spread.
  • 3 tbsp Bayou City All-Purpose Seasoning A spice blend for seasoning; regular seasoning mix or Cajun seasoning works well.
  • 1 tbsp Garlic Pepper Adds additional flavor; can use regular black pepper as a substitute.
  • 1 tsp Onion Powder Enhances savory depth; fresh onions can also be sautéed for additional flavor.
  • 0.5 tsp Cayenne Pepper Provides a slight kick; adjust according to your spice preference or omit for less heat.
  • 4 cups Broccoli Florets (cooked) Adds nutrition and color; can substitute with cauliflower or green beans.
  • 4 cups Cooked White Rice Forms the bulk of the dish; opt for brown rice for a healthier alternative.
  • Salt and Pepper To taste.

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Melt 2 tablespoons of unsalted butter in a large skillet over medium heat, add olive oil, and cook the seasoned chicken thighs until golden brown, about 6-7 minutes on each side.
  3. Remove the chicken and shred it into bite-sized pieces using two forks.
  4. In the same skillet, sauté minced garlic over medium heat for 2 minutes until fragrant.
  5. Deglaze the skillet with 1/4 cup of chicken stock, scraping the bottom for browned bits, and simmer for 4 minutes.
  6. Reduce heat to low, mix in cream of chicken soup and heavy cream, followed by the shredded cheddar and Boursin cheese until smooth.
  7. In a mixing bowl, combine shredded chicken, cooked rice, and cooked broccoli, then pour in the cheese sauce and season with salt and pepper, stirring well.
  8. Transfer to a greased casserole dish, top with cheddar cheese, and bake covered for 20 minutes, then uncovered for another 10-15 minutes until golden brown.
  9. Let cool for a few minutes before serving and consider garnishing with parsley and paprika.
