- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out puff pastry to 1/8-inch thickness and cut into rectangles (4x6 inches).
- In a large mixing bowl, combine eggs, cheese, bacon, onions, salt, and pepper; stir until well blended.
- Take half the pastry rectangles and spoon filling onto the center, leaving a half-inch border.
- Fold the other half of the pastry rectangles over the filling and crimp edges with a fork.
- Optionally brush tops with an egg wash and sprinkle with sesame seeds or herbs.
- Bake on the prepared sheet for 18-22 minutes or until golden brown and flaky.
- Remove from oven and let cool on a wire rack before serving.
