Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper.
  2. In a large mixing bowl, combine the oats, flour, brown sugar, baking soda, salt, and optional cinnamon.
  3. Melt the butter and allow it to cool, then pour it and the vanilla extract into the dry mixture.
  4. Press half of the oat mixture into the bottom of the baking pan.
  5. In a separate bowl, toss the blueberries with sugar and cornstarch, then spread over the oat base.
  6. Crumble the remaining oat mixture over the blueberry filling.
  7. Bake for 35-40 minutes until golden brown; let cool completely before cutting into squares.
