Ingredients
  

Tofu Marinade
  • 1 block Extra-Firm Tofu Feel free to use other firm types if needed.
  • 1 teaspoon Kosher Salt Sea salt is a great substitute.
  • 1 teaspoon Paprika Smoked paprika can deepen the flavor.
  • 1 teaspoon Garlic Powder Fresh minced garlic can be substituted.
  • 1 teaspoon Chili Powder Can be omitted for milder flavor.
  • 1 teaspoon Black Pepper Opt for freshly ground for best flavor.
  • 1 teaspoon Ground Cumin Optional if you prefer a simpler flavor.
Vegetables
  • 2 medium Sweet Potatoes Regular potatoes can be used as an alternative.
  • 2 cups Broccoli Cauliflower or Brussels sprouts can be substituted.
For Roasting
  • 2 tablespoons Neutral Oil Olive oil or avocado oil works beautifully.
To Finish
  • 1 cup BBQ Sauce Homemade or store-bought can be used.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Slice the extra-firm tofu into cubes after boiling it in salted water for five minutes.
  3. Toss the cubed tofu with neutral oil, kosher salt, paprika, garlic powder, chili powder, black pepper, and ground cumin.
  4. Peel and slice the sweet potatoes into 1/3-inch thick half-moon shapes.
  5. Cut broccoli into florets that are approximately 1.5 inches wide and 3 inches long.
  6. Spread the seasoned tofu, sweet potatoes, and broccoli evenly on the prepared baking sheet.
  7. Roast for 25 to 30 minutes, stirring halfway through.
  8. Drizzle BBQ sauce over the roasted vegetables and return to the oven for an additional 10 minutes.
  9. Allow to cool slightly before serving.

Notes

For best results, press the tofu before boiling and avoid overcrowding the baking sheet. Feel free to adjust seasonings to taste.
