For the Bowl
  • 2 cups Cooked Brown Rice Can try quinoa or cauliflower rice.
  • 1 medium Carrot Peeled into ribbons.
  • 1 cup Shelled Edamame Swap with green peas if desired.
  • 1 medium English Cucumber Sliced.
  • 1 medium Jalapeño Reduce or omit based on spice tolerance.
  • to taste Chopped Cilantro
  • to taste Sesame Seeds

Instructions

  3. Make Meatballs: Combine ground turkey and other meatball ingredients in a bowl and mix gently, then form into meatballs.
  4. Bake Meatballs: Bake meatballs for about 15 minutes until golden brown.
  5. Prepare Sauce: Combine sauce ingredients in a saucepan, whisk, and simmer.
  6. Combine Meatballs and Sauce: Toss cooked meatballs in the sauce to coat.
  7. Assemble Bowls: Serve rice topped with meatballs and vegetables.
