  • 2 tablespoons Miso Paste or salt as a substitute
  • 4 pieces Medjool Dates or other dried fruits like apricots
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Cardamom
  • 2 cups Soy Milk or other plant-based milk
  • 1/2 cup Yogurt Silk's Soy Yogurt or Kite Hill recommended
For the Crumble Topping
  • 1 cup Oats or gluten-free oats
  • 1/2 cup Walnuts or almonds/pecans
For the Apple Layer
  • 2 cups Apples chopped; can use banana instead
  • 1/2 cup Apple Butter or sautéed apples as substitute

Method
 

Preparation Steps
  1. Blend the yogurt, apple butter, Medjool dates, miso paste, cinnamon, cardamom, and soy milk until smooth.
  2. Combine chia seeds with the blended mixture and let sit for 5 minutes, then whisk again and refrigerate for 1 hour.
  3. Prepare the crumble by pulsing oats, walnuts, and dates in a food processor until resembling coarse crumbs.
  4. Sauté chopped apples with maple syrup and a sprinkle of cinnamon for 3-4 minutes until softened.
  5. Assemble by layering chia pudding, warm apples, and crumble topping in jars.
